Not a menu to navigate. A meal to follow.
The evening begins at one of two set times so the room can move together. You will be welcomed, seated at the hinoki counter and guided through the menu as each ingredient reaches its best expression.
Some courses arrive with a story; others are better met in silence. Ask questions whenever you like. Omakase should feel generous and human, never like a test of knowledge.

Arrival
A small opening taste and time to settle at the counter.

Otsumami
Seasonal dishes move from delicate to deep, preparing the palate for nigiri.

Nigiri
Rice, temperature and cut calibrated piece by piece, served directly from the chef’s hand.

Warmth
A cooked course brings smoke, broth or gentle charcoal into the sequence.

Close
Tamago, tea and a subtle seasonal sweet bring the meal quietly home.

At the counter
Rice is the quiet centre.
Our shari is prepared before each service, seasoned with a blend of red vinegars and held at the temperature that best supports the fish. Every piece is formed and served in a narrow window—one reason the counter experience matters.
Please enjoy each piece soon after it is placed before you. Chopsticks or hands are equally welcome.
The room
Eight seats. Nothing extraneous.
The counter is cut from pale hinoki; the walls are hand-finished in charcoal plaster. Lighting, sound and service are calibrated to draw the room inward, toward the work and one another.
